Hello to all Italian food enthusiasts! Today, we invite you to discover the art of preparing homemade ravioli, a treasure of Roman cuisine. Ravioli, with their savory filling and delicate dough, are a true expression of love and culinary tradition. Let’s get our hands dirty together!
Ingredients:
For the dough:
- 300 g of flour
- 3 eggs
- A pinch of salt
For the filling:
- 200 g of ricotta
- 100 g of cooked and chopped spinach
- 50 g of grated parmesan cheese
- Salt, pepper
- Nutmeg (optional)
Preparation Steps:
- Prepare the Dough: On a work surface, make a well with the flour. Crack the eggs into the center and add the salt. Mix and knead until you obtain a smooth and elastic dough. If it’s too dry, add a little water. Let it rest, covered, for 30 minutes.
- Prepare the Filling: Mix the ricotta, spinach, parmesan cheese, salt, pepper, and a pinch of nutmeg.
- Shape the Ravioli: Roll out the dough thinly. Place small amounts of filling on the dough, leaving space between each portion. Cover with another layer of dough and press around the filling to seal. Cut the ravioli with a pastry wheel or a cookie cutter.
- Cook the Ravioli: Boil salted water in a large saucepan. Add the ravioli and cook for about 4 minutes, until they rise to the surface.
- Serve: Drain the ravioli and serve with your choice of sauce (tomato sauce, butter and sage, etc.).
Variations:
Experiment with different fillings such as minced meat, mushrooms, or a mix of cheeses for a unique touch. Add fresh herbs or spices to your liking. You can also try seafood-based fillings or incorporate various vegetables.
